I’m always on the search for healthy snacks. I know, the more I plan and portion out my food, the more successful I am at staying healthy and not overeating. It’s those times when I don’t have healthy snacks that I can grab quickly, that I eat weird crap. I pretty much don’t keep junk food in the house but you can bet I will figure something out that’s going to end up screwing me up for the day!
I love trail mix, but let’s face it-have you ever looked at the fat and calories in it? It’s a lot. So I decided to mix it up a bit, portion it out and keep the protein high so it will fill us up for longer! My trail mix still has fat and calories but by choosing quality ingredients and dividing it into portions, you will have a healthy snack! Let me say, 1/2 a cup of this trail mix is so filling!
I have chosen a couple of super foods, some high fiber foods, and some high protein foods, not to mention the huge boost in antioxidants! One ingredient in particular is goji berries-I could write a full post on the benefits of this tiny berry! Goji berries have the highest amount of protein of any fruit. They are full with vitamin C, contain more carotenoids than any other food, have twenty-one trace minerals, and are high in fiber. They have 15 times the amount of iron found in spinach, as well as calcium, zinc, selenium and many other important trace minerals! You can see why it’s called a “super food”!!
What You’ll Need:
Plastic ziploc baggies
1 cup Organic Cashews (find them HERE)
1/2 cup Goji Berries (find them HERE)
1 cup Organic Raisins (find them HERE)
1/2 cup Dark Chocolate chips (find them HERE)
1/2 cup Organic Sunflower Seeds (find them HERE)
1/2 cup Dried Young Coconut (find them HERE)
Feel free to change the proportions to your taste.
Let’s face it, protein bars are so convenient, they fill you up and are handy when there’s no time for a meal, but they are so full of chemicals. Can I say chemical sh*t storm? Excuse my french, but there’s no other term that describes protein bars so well!
I keep this snack around so on those days where the running around just doesn’t stop, I can grab a snack that will do the job and I can feel good about it! I like to fill each baggie with 1/2 a cup of the mix. It’s the perfect amount to really fill you up-it’s great for a nagging sweet tooth and will also keep you full!
Be sure to purchase quality, organic ingredients! I have linked all the products to Amazon, but I found many of my ingredients at my local health food store.
So go make a batch of this yummy snack, portion it out and win the battle on snacking!
xx, Jenni

I think I would add almonds to the mix.
