Hmmm, I love fall. I think I start to fold up around mid-August every year. I get so sick of the heat and sun. By the time fall weather blows in, I’m so ready to get eye ball deep in pumpkin, break out the scary movies (they don’t call me Jenni Raincloud for nothin’!) and whip up some s’mores. I love s’mores so much that I have been known to roast my single marshmallow over a tealight. This was before I discovered you could get perfect roasted marshmallows in the oven! I ran into THIS recipe on pinterest and decided to give it a go. Boy, was I impressed…..
This is a really simple recipe. It takes maybe a total of 10 minutes from start to shove em’ in your mouth. This is kid tested and mommy approved. My girls dug in and didn’t come up for air until it was gone! We sat around the (indoor) fire, watched Caspar and literally inhaled these! I could totally see doing this for a girl’s night as well. A bottle of Reisling and a skillet of these would be the perfect night!
What You’ll Need:
- 1 Bag of milk chocolate chips
- 1 Bag of marshmallows
- 1 Box of graham crackers for dipping
- Scissors
- A small cast iron skillet (find one HERE)
Directions:
- Heat oven to 450F
- Line your skillet with a thin layer of chocolate chips.
- Cut your marshmallows in half and place them on top of the chocolate chips.
- Place your skillet on the top shelf of oven and let bake for 6-8 minutes.
Remove from oven and let cool. Beware of the VERY HOT skillet!!Of course, putting a cast iron skillet in an oven is going to really heat it up. I covered the handle of mine with a towel and let it cool a bit before we dug in. It would be easy to burn your wrist if you aren’t careful.
As you can see from the pics, the marshmallows are so perfectly roasted and bubbling and beneath, the chips are soft and warm! I’m seriously thinking of making another skillet right now-this is torture!

P.S. This recipe is rich and the 3 of us had a hard time getting through all of it. If you just need 1 s’more, I like to put a graham cracker square, 3 little rectangles of a Hershey bar and a whole marshmallow on a cookie sheet in the oven (medium level or it will catch fire) on broil. Watch it the whole time or your marshmallows will burn. It takes about 3-5 minutes to cook perfectly! Pop the graham cracker top on and go to town!
I thought you had made homemade marshmallows before? The store bought ones are full of garbage that we don’t need.
